I love autumn. The days are cooler . . . the leaves are changing, and . . . it’s apple season! And with that comes our annual trip to the local farm where we pick apples . . . tons of apples. While we always start out eating the apples right out of the bag, we soon realize we better start using apples in recipes or the fruits of our labor will get squishy and yucky. And no one likes that. What we do like is getting creative with our apples. That’s why we like this recipe for apple cottage cheese pancakes so much!
What You Need to Make Apple Cottage Cheese Pancakes:
- 2 1/4 cups apples (3 large apples)
- 1 1/2 cups cottage cheese
- 6 eggs
- 3/4 teaspoons cinnamon
- 3 Tablespoons maple syrup
- 3/4 teaspoons salt
- 3/4 cups flour
- 3 teaspoons baking powder
- 3 Tablespoons butter
How to Make Apple Cottage Cheese Pancakes:
1. Peel, core and grate the apples into a large mixing bowl.
2. Mix in the cottage cheese, eggs, cinnamon, maple syrup and salt.
3. Stir in the flour and baking powder.
4. Spread butter on a large skillet or electric griddle set on medium heat.
5. Ladle 1/4 cup of the pancake batter onto the griddle for each pancake.
6. Flip the pancakes when the top bubbles and the bottom is browned.
7. Serve immediately or keep warm in the oven.
These apple cottage cheese pancakes are a big hit and our girls request them often. They don’t even care that they’re healthy!
